Details

Ingredient: ancho chile (Capsicum Annum) - pronounced "Ahn-cho" Country of Origin: USA Ancho chile is the dried version of the poblano chili pepper which originates in the state of Puebla, Mexico, and is one of the most commonly used dried chile in authentic Mexican cuisine. The whole ancho pepper is heart shaped and about 7 - 10 mm long with a deep, reddish brown to black color. The flavor has been described as mildly fruity, sweet, slightly smoky with undertones of plum, raisin, tobacco and a slightly earthy bitterness. With a mild to medium heat, it ranks between 4,000-9,000 on the Scoville Heat Scale (Reference: http://www.ushotstuff.com/Heat.Scale.htm) Common use: Ancho chile is a key ingredient in the famous “holy trinity” of Mexican chiles used in mole (pronounced MOH-leh) or mole poblano which contains about 20 ingredients including chocolate which works to counteract the heat. Ancho has many culinary applications and is enjoyed in soups or stews, on pizza or popcorn, and as a spice rub or a glaze when mixed with honey.   Storage: Store in a cool, dark, dry place. This product has been packaged in the same facility as peanuts, tree nuts, wheat, and soy products.
